Donkey-hide gelatin is gelatin obtained from the skin of the donkey (Equus asinus) by soaking and stewing. It is used in the traditional medicine of China, called ejiao. It is hard to believe we could mix coffee with it; however, Pacific Coffee did create a coffee drink based on EJiao. Ejiao coffee is a new drink based on traditional Chinese medicine.
